Spinach salad with dressing

Yield: 6 Servings

Measure Ingredient
1 pounds Fresh spinach; washed
½ pounds Mushrooms; sliced
6 slices Bacon; crisply cooked and crumbled
2 \N Hard-boiled eggs; sliced
1 medium Purple onion; sliced
1 \N Hard-boiled egg yolk
1 \N Clove (small) garlic
¼ cup Red wine vinegar
¾ cup Salad oil
1 teaspoon Salt
1 teaspoon Sugar
\N \N Freshly ground pepper to taste

DRESSING

For dressing, combine egg yolk, garlic, vinegar, oil, salt, sugar and pepper in electric blender. Cover and blend well. For salad, combine spinach, mushrooms, bacon, eggs and onion in a large bowl. Add dressing and toss gently. Yield: 6 servings. SHEILA WILSON (MRS. PHILIP)
