Spicy udon salad

Ingredients

1cupEDEN Arame or Hiziki
1cupWater
2mediumsCarrots cut into matchsticks
1packEDEN Udon or EDEN SOba
4Green onions, thinly sliced
1tablespoonEDEN Hot Pepper Sesame Oil
1tablespoonEDEN Toasted Sesame Oil
¼cupEDEN Ume Vinegar
¼cupTahini
3Cloves garlic; minced
cupWater or stock

Directions

DRESSING

Soak Arame or Hiziki in water for 10 minutes. Simmer for 10-15 minutes. Drain. Lightly steam carrots. Rinse with cold water. Cook pasta as package directs. Mix pasta, Arame, carrots, and green onions. Prepare dressing. Add to salad. Mix well. Chill before serving.
