Spicy udon salad

Yield: 5 Servings

Measure Ingredient
1 cup EDEN Arame or Hiziki
1 cup Water
2 mediums Carrots cut into matchsticks
1 pack EDEN Udon or EDEN SOba
4 \N Green onions, thinly sliced
1 tablespoon EDEN Hot Pepper Sesame Oil
1 tablespoon EDEN Toasted Sesame Oil
¼ cup EDEN Ume Vinegar
¼ cup Tahini
3 \N Cloves garlic; minced
⅛ cup Water or stock

DRESSING

Soak Arame or Hiziki in water for 10 minutes. Simmer for 10-15 minutes. Drain. Lightly steam carrots. Rinse with cold water. Cook pasta as package directs. Mix pasta, Arame, carrots, and green onions. Prepare dressing. Add to salad. Mix well. Chill before serving.
