Spicy udon salad with arame

Yield: 6 Servings

Measure Ingredient
1 cup EDEN Arame or Hijiki
1 cup Water
2 mediums Carrots cut into matchsticks
1 pack EDEN Soba or Udon
4 \N Green onions sliced into thin diagonals
1 tablespoon EDEN Hot Pepper Sesame Oil
1 tablespoon EDEN Toasted Sesame Oil
⅛ cup Water or stock
¼ cup EDEN Ume Plum Vinegar
¼ cup Sesame tahini
3 \N Garlic cloves peele and pressed

DRESSING

Soak arame or hijiki in water for 10 minutes. Simmer for 10-15 minutes. Drain. Lightly steam carrots. Rinse with cold water to set color. Cook pasta as package directs. Rinse and drain. Mix pasta, arame, carrots, and green onions. Prepare dressing. Add to salad.

Mix well. Chill.
