Spicy udon salad with arame

Ingredients

1cupEDEN Arame or Hijiki
1cupWater
2mediumsCarrots cut into matchsticks
1packEDEN Soba or Udon
4Green onions sliced into thin diagonals
1tablespoonEDEN Hot Pepper Sesame Oil
1tablespoonEDEN Toasted Sesame Oil
cupWater or stock
¼cupEDEN Ume Plum Vinegar
¼cupSesame tahini
3Garlic cloves peele and pressed

Directions

DRESSING

Soak arame or hijiki in water for 10 minutes. Simmer for 10-15 minutes. Drain. Lightly steam carrots. Rinse with cold water to set color. Cook pasta as package directs. Rinse and drain. Mix pasta, arame, carrots, and green onions. Prepare dressing. Add to salad.

Mix well. Chill.
