Directions
Remove chorizo sausage from casing. Cook chorizo, potato, and onion in lg frying pan over mdm-low heat 12-15 mins, breaking meat into pieces. Pour off drippings. Pour eggs over meat mixture; cook and stir over mdm heat 2-3 mins, until eggs are cooked.
Line each tortilla with a lettuce leaf. Place an equal amount of meat mixture in each tortilla and sprinkle with an equal amount of cheese.
Fold bottom side of tortilla over filling; fold each side of tortilla toward center, overlapping to form pocket. Top with tomato and avocado. Serve immediately.
