Spicy ginger sauce

1Carrot, shredded
½teaspoonChili oil or - 1/4 ts red pepper
2Green onions, sliced thin
½Cucumber, seeded, peeled ---
And chopped
¼cupChopped fresh cilantro

Directions

Whisk all ingredients together in a large bowl. Serve over 12 oz. (dry weight) of japanese noodles. Serve well chilled.
