Spicy chilled chi-nese noodles

1mediumCucumber; shredded
4ouncesBaked ham; shredded
½teaspoonSalt
8ouncesCooked chicken
1Carrot; shredded
tablespoonToasted sesame seeds
3tablespoonsSoy sauce
tablespoonVinegar
1teaspoonSugar
½cupChicken stock
¾teaspoonTabasco
3tablespoonsScallions; chopped
tablespoonSesame oil

Preparation : Bring a large kettle of water to a boil; add ½ tsp.salt and the noo-dles. Boil 1½ minutes, until the noodles are just done. Drain and rinse with cold water to cool. Drain well and toss with 1 ½ Tb.

Surround with the meats and vegetables. Top with the sauce and sprinkle with the toasted sesame seeds.
