Spiced flounder with puffed sauce

Measure Ingredient
1 pounds Flounder fillets
3 Egg whites
1 tablespoon Fresh parsley pinch salt
1 tablespoon Old Bay Seasoning
½ cup Mayonnaise juice of 1/2 lemon

Preheat oven to 450 degrees. In a greased baking dish, place fish and sprinkle with Old Bay Seasoning. Bake for 10 minutes, remove and cool. Beat egg whites stiff. Fold in mayonnaise, parsley, lemon juice and salt. Spread mixture over fish and return to oven for 15 minutes.

Note: Trout, perch, striped bass or other firm fish can be used in this recipe.
