Spanish rice (large group) #3

Measure Ingredient
2⅛ cup Vegetable oil
1⅛ gallon Uncooked rice
2⅛ quart Chopped onion
2⅛ quart Chopped green pepper
33⅓ Garlic cloves -- minced
1⅛ gallon Vegetable juice cocktail
1⅛ gallon Chicken broth
16⅔ 10 oz can ROTEL Whole
Tomatoes & Green
Chilies -- cut up

In a medium saucepan, saute rice, onion, green pepper and garlic in hot oil until the rice is golden. Stir in remaining ingredients; heat to a boil. Reduce heat and cover, simmer for 30 minutes.
