¼ | cup | Onion; finely chopped |
¼ | cup | Green pepper; finely chopped |
3 | cups | Rice; cooked |
2 | xes | Tomatoes; 16 oz can |
1½ | teaspoon | Salt |
⅛ | teaspoon | Pepper |
¼ | cup | Grated American cheese |
Directions
Fry bacon until crisp. Remove to 1½ qt. baking dish and whisk around to grease bowl. Add to bacon fat in skillet the onion and green pepper. Saute until onion is yellow. Combine in baking dish with cooked rice, tomatoes, salt and pepper. Sprinkle cheese ovr top.
