Measure | Ingredient |

1 tablespoon | Soy sauce; low sodium |
1 tablespoon | Dry white wine; or vermouth |
2 teaspoons | Lemon juice; or vinegar |
2 \N | Pieces ginger; peeled and the size |
\N \N | ; of quarters |
¼ cup | Butter; cut in small cubes |
PREP butter and bring to room temperature.
PUT liquids in small sauce pan on medium high heat.
ADD pieces of ginger.
SIMMER and reduce to approximately 1-2 teaspoons.
REMOVE the ginger.
WHISK in butter.
Note: If you choose to use regular soy, use no salt in preparing any food that you intend to sauce.
