4 ounces | Golden syrup |
2 ounces | Butter |
2 ounces | Dark brown sugar(soft) |
\N \N | Rind of one orange, finely grated |
2 tablespoons | Orange juice |
6 ounces | Self-rising flour, sifted |
1 teaspoon | Ground ginger |
Grease two or three baking sheets. Place the syrup, butter and sugar into a medium saucepan. Add the orange rind and juice to the pan. Heat very gently until the ingredients have completely melted and are evenly blended together. Leave the mixture to cool slightly, then add the flour and ginger. Mix well until smooth. Place small spoonfuls of the mixture on to the baking sheets, leaving room for spreading. Bake in the oven at 350F for about 12 minutes, until golden brown. Leave to stand for 1 minute before easing off a fish slice. Cool completely on a wire rack.
