|1||Box frozen speckled butter beans|
|⅓ pounds||Ground sausage|
|1 medium||Chopped onion|
|1 small||Grated carrot|
|1 tablespoon||Chopped parsley|
Cook butter beans and rice according to package directions. Brown sausage in skillet, drain. Mix sausage, onion, carrot and parsley together. Arrange cooked rice in bottom of casserole dish. Sprinkle sausage mixture to cover rice. Top with speckled butter beans and cover. Bake in 300 degrees oven for 15 minutes or until piping hot. Serves 4.
