Sour cream blueberry pancakes (sandy colby)

1 | each | Egg |
1 | cup | Milk |
¼ | cup | Sour cream |
2 | tablespoons | Melted butter |
½ | cup | Blueberries |
Directions
Sift together flour, baking powder, salt and sugar. Beat together egg, milk and sour cream. Pour milk mixture over dry ingredients and blend with rotary beater until batter is just smooth. Stir in butter; fold in blueberries. Pour 2 Tbsp on hot griddle for each cake <pour 1 Tbsp if you want silver dollar sized cakes>. Brown on one side, turn, brown on the other side. Serve hot with butter and maple syrup, or Maine Blueberry Syrup (recipe follows). Makes 12 cakes using 2 Tbsp/each. Maine Blueberry Syrup: 2 c blueberries ½ c sugar ½ c water 1 thin slice lemon Simmer together blueberries, sugar, water and lemon for about 10 minutes. About 2½ cups.
