Smoked fish and white bean brandade

\N \N ; cannellini beans,
\N \N ; rinsed and drained
\N \N A; (1-pound) piece
\N \N ; smoked whitefish,
\N \N ; skin and bones
\N \N ; discarded and fish
\N \N ; flaked (about 3
\N \N ; cups)
1 \N Garlic clove; chopped and mashed
\N \N ; to a paste with 1/2
\N \N ; teaspoon salt
¾ cup Milk
2 teaspoons Fresh thyme leaves; minced
\N \N Melba toasts or red bell pepper; cut into wide
\N \N ; strips


In a food processor blend beans, fish, and garlic paste until smooth. With motor running add milk in a slow stream. Stir in thyme and salt to taste.

Serve brandade with toasts or bell pepper strips.

Makes about 3½ cups.
