Savory and tomato sauce

Ingredients

500 grams Ripe tomatoes; (1lb)
1 Onion; chopped finely
40 grams Butter or margarine; (1 1/2 oz)
2 tablespoons Chopped savory or 1 tablespoon dried
; savory
150 millilitres Milk or single cream; (1/4 pint)
Salt and pepper

Directions

1. Pour boiling water over the tomatoes in a bowl, leave them for a minute, and then peel and chop them.

2. Simmer the chopped tomatoes and onion in the butter or margarine for 8-10 minutes and then puree in a blender.

3. Add the savory and thin out with the milk or cream.

4. Season to taste with salt and pepper.

NOTES : This aromatic sauce is superb with grilled chops, or with roast chicken, and makes a lovely coating for lightly cooked cauliflower or steamed courgettes. It also makes a light, creamy sauce for pasta, with a bowl of grated cheese to pass around. This quantity makes 450ml (¾ pint).
