Salsa de jitomate (tomato sauce)

Yield: 2 Cups

Measure Ingredient
2 tablespoons Oil, vegetable
1 each Onions; finely chopped
1 each Garlic cloves; finely choppd
2 larges Tomatoes; peeled, seeded, chopped
½ teaspoon Sugar, granulated
2 eaches Chile, serrano; chopped
\N \N Salt
\N \N Pepper, black
1 tablespoon Coriander; chopped

Heat oil and fry onion and garlic until limp. Add remaining ingredients, except coriander. Cook gently for 15 minutes. Taste for seasoning. Add coriander and cook for 1-2 miutes more. Serve hot or cold.
