Salsa de jitomate (tomato sauce)

Ingredients

| 1 | each | Onions; finely chopped |
| 1 | each | Garlic cloves; finely choppd |
| 2 | larges | Tomatoes; peeled, seeded, chopped |
| ½ | teaspoon | Sugar, granulated |
| 2 | eaches | Chile, serrano; chopped |
| Salt | ||
| Pepper, black | ||
| 1 | tablespoon | Coriander; chopped |
Directions
Heat oil and fry onion and garlic until limp. Add remaining ingredients, except coriander. Cook gently for 15 minutes. Taste for seasoning. Add coriander and cook for 1-2 miutes more. Serve hot or cold.
