Salsa de jitomate (tomato sauce)

Ingredients

1eachOnions; finely chopped
1eachGarlic cloves; finely choppd
2largesTomatoes; peeled, seeded, chopped
½teaspoonSugar, granulated
2eachesChile, serrano; chopped
Salt
Pepper, black
1tablespoonCoriander; chopped

Directions

Heat oil and fry onion and garlic until limp. Add remaining ingredients, except coriander. Cook gently for 15 minutes. Taste for seasoning. Add coriander and cook for 1-2 miutes more. Serve hot or cold.
