Salsa de jitomate

Yield: 12 servings

Measure Ingredient
1 tablespoon olive oil
1 each medium onion, fine chopped
2 eaches cloves garlic, chopped
3 eaches tomatoes, peeled and seeded
½ teaspoon sugar
2 eaches chiles serranos, chopped
1 teaspoon salt
1 tablespoon freshly ground black pepper
1 tablespoon cilantro, chopped

Fry the onions and garlic until limp. Add remaining ingredients except cilantro and cook gently, 15 minutes. Add cilantro and cook 1-2 minutes more. Serve hot or cold. Makes 2 cups.
