Rosy fruit salsa

Yield: 4 cups

Measure Ingredient
1 cup Ripe cantaloupe 1/4\" dice
1 cup Ripe watermelon 1/4\" dice
1 cup Peeled cucumber 1/4\" dice
4 \N Ripe plum tomatoes, seeded 1/4\" dice
⅓ cup Red onion(s), finely chopped
2 tablespoons Lime juice
2 tablespoons Flat-leaf parsley coarsely chopped
1 teaspoon Jalapeo chile seeded and minced

Mix all ingredients in a bowl and let rest at room temperature for up to 1 hour before serving.
