1cupRipe watermelon 1/4\" dice
1cupPeeled cucumber 1/4\" dice
4Ripe plum tomatoes, seeded 1/4\" dice
cupRed onion(s), finely chopped
2tablespoonsLime juice
2tablespoonsFlat-leaf parsley coarsely chopped
1teaspoonJalapeo chile seeded and minced

Directions

Mix all ingredients in a bowl and let rest at room temperature for up to 1 hour before serving.
