Roquefort cheese croutes

Measure Ingredient
12 Two-inch rounds of good French
Or Italian bread; cut 1/4" thick slice
3 ounces Roquefort; cambozola, or other
1 Full flavored blue cheese; softened
1 tablespoon Dry sherry
2 teaspoons Finely minced green onion
1 teaspoon Finely minced garlic

Toast bread rounds lightly under a broiler. Beat remaining ingredients together and spread evenly on croutes.
