Rodale's tomato sauce

Yield: 1 Servings

Measure Ingredient
4 \N Green onions, thinly slices
1 \N Clove garlic, minced
1 tablespoon Oil
2 tablespoons Tomato paste
1 cup Tomato juice
1 cup Meat or vegetable stock
½ teaspoon Fennel seeds
½ teaspoon Oregano
¼ teaspoon Salt
2 tablespoons Cornstarch
4 tablespoons Cold water

Saute green onions and garlic in oil for a minute or two. Add tomato paste and blend in. Stir in tomato juice and stock. Season with herbs and salt.

Dissolve cornstarch in cold water and stir into boiling liquid, stirring constantly. Cook until thickened.

Yield: approximately 2-½ cups.
