Rice with snow peas and red pepper

Ingredients

| 2 | cups | Chicken stock |
| 2 | tablespoons | Soya sauce |
| 1½ | teaspoon | Minced ginger root (or 1/2 tsp. ground ginger) |
| 1 | clove | Garlic, minced |
| 1 | cup | Long-grain white rice |
| 2 | cups | Snow peas, cut into 1 inch diagonal pieces-about 8 oz. |
| Half red bell pepper, diced | ||
| 3 | Green onions, chopped | |
| 1 | teaspoon | Toasted sesame oil (opt) |
Directions
In a medium saucepan, combine stock, soya sauce, ginger and garlic; bring to a boil. Stir in rice; reduce heat to low, cover and simmer for 20 minutes or until rice is just tender.
Add snow peas, red pepper and green onions. Cook, covered, for 5 minutes more or until vegetables are tender-crisp. Stir in sesame oil, if using.
