Rice pudding #06

Yield: 6 Servings

Measure Ingredient
1 cup Boiling water
½ cup Rice (see note)
½ teaspoon Salt
1 quart Skim milk
2 tablespoons Butter
2 \N Eggs; beaten
½ cup Sugar
½ cup Raisins
½ teaspoon Vanilla
1 \N Cinnamon stick; optional

Date: Wed, 27 Mar 1996 13:45:37 -0700 From: Margaret Crist <jmcrist@...> Boil water, rice & salt for 7 min. Add milk, butter and cinnamon stick and cook on low heat for 1¼ hours. Remove from heat, add eggs, sugar, raisins & vanilla. Cook a minute and take off stove and cool. Pudding will thicken as it cools.

Serving Ideas : serve with cinnamon & cream if desired.

NOTES : *(short grain rice makes a creamier pudding then long grain.) MC-RECIPE@...
