|2 cups||Cooked white rice|
|1 \N||(3 oz.) pkg. cream cheese|
|1 cup||Drained canned pineapple|
|1 large||Navel orange, peeled --|
|¼ cup||Chopped maraschino cherries|
|1 cup||Miniature marshmallows|
|½ cup||Flaked coconut|
|¼ cup||Slivered almonds|
|1 \N||Envelope whipped topping mix|
|\N \N||Prepared or 1/2 pt.whipping cream, whipped|
*Additional maraschino cherries to garnish. Makes 12 (½ c.
servings). Combine cooked rice, milk and sugar. Cook until thick and creamy, about 10 to 15 minutes, stirring occasionally. Cut cream cheese into small cubes and stir into rice while still warm. Stir again once the cheese softens and the mixture cools. Fold in the pineapple, cherries, marshmallows, coconut, almonds and whipped cream. Spoon into serving dishes and chill. Garnish with cherries.
