|1½ pounds||Potato, raw (lbs)|
|1 medium||Pepper red|
|1 tablespoon||Garlic clove minced|
|4 tablespoons||Olive oil|
|1 teaspoon||Rosemary dried|
You can use any type potato but get the small size. Wash well but do not peel. Mix in a small bowl all the ingredients and rub onto the potatoes. Place in a 400 degree oven for about one hour until potatoes tender. Options: Use sliced onions with or instead of red pepper. Add a ½ tsp of liquid smoke for meal smell.
