Recipe: roasted potatoes

Yield: 4 servings

Measure Ingredient
1½ pounds Potato, raw (lbs)
1 medium Pepper red
1 tablespoon Garlic clove minced
4 tablespoons Olive oil
1 teaspoon Rosemary dried

You can use any type potato but get the small size. Wash well but do not peel. Mix in a small bowl all the ingredients and rub onto the potatoes. Place in a 400 degree oven for about one hour until potatoes tender. Options: Use sliced onions with or instead of red pepper. Add a ½ tsp of liquid smoke for meal smell.
