Ranch mac 'n' cheese

1cupColby cheese -- cubed
1cupMonterey jack cheese --
Cubed
1cupSour cream -- 8 oz
½cupSaltine crackers -- crushed
1poundsMacaroni -- elbow
Cooked and drained
Grated Parmesan cheese
Ranch salad dressing -- mix
1ounceEach

Directions

In a dutch oven combine the first eight ingredients. Cook and stir over medium heat until cheese has melted and mixture begins to thicken. Fold in the sour cream. Add crackers and macaroni. Cook until heated through, stirring frequently. Spoon into a serving dish; sprinkle with parmesan cheese. Yield: 6 to 8 servings.
