2cupsCooked AM Quinoa
1cupChopped parsley
½cupChopped green onion
1Garlic clove; pressed
½teaspoonBasil
½cupLemon juice
¼cupAM Unrefined Olive Oil
teaspoonSea salt (optional)
teaspoonPepper (optional)
Whole lettuce leaves

Directions

Mix first 9 ingredients and place in a salad bowl lined with washed lettuce leaves. Refrigerate for at least two hours to let flavor blend. Fresh mint and black olives make nice garnishes for this dish.
