Ginger minted chicken

| ½ | cup | Nonfat yogurt; |
| ¼ | cup | Fresh mint; coarsely chopped |
| ½ | tablespoon | Ginger; chopped fresh |
| ¼ | cup | Onion; chopped |
| 1 | medium | Clove garlic; crushed |
| 1 | teaspoon | Ground coriander; |
| 1 | pinch | Chicken breasts; skinless boneless (5-oz ea) |
| 2 | Sprigs fresh mint; for garnish | |
Directions
Mix together yogurt, chopped mint, ginger, onion, garlic, coriander and cayenne. Remove as much fat as possible from chicken. With a skewer or knife, poke several holes in chicken. Add to yogurt mixture and marinate 20 minutes, turning once. Preheat broiler. Line a baking tray with foil. Broil chicken on to shelf for 5 minutes per side, or until cooked through. Serve on bed of Lemon Barley with a sprig of fresh mint as a garnish.
