Ginger chicken stir-fry

Ingredients

| 2 | tablespoons | Clivered gingerroot |
| 1 | Clove garlic, minced | |
| 2 | Boneless skinless chicken | |
| Breasts, cubed | ||

| 1 | Sweet red or green pepper | |

| 1 | cup | Sliced mushrooms |
| 1 | tablespoon | Soy sauce |
| 1 | tablespoon | Oyster sauce |

Directions
In skillet or wok, heat oil over high heat; stir-fry ginger and garlic for 30 seconds or until fragrant. Add chicken; stir-fry for 2 or 4 minutes or until lightly browned. Add onions, sweet pepper and mushrooms; stir-fry for 1 to 3 minutes or until softened. Stir in soy and oyster sauces, tossing to coat. Sprinkle with coriander. Makes 4 servings.
