Ginger chicken stir-fry

Ingredients

2tablespoonsClivered gingerroot
1Clove garlic, minced
2Boneless skinless chicken
Breasts, cubed
2Onions, chopped
1Sweet red or green pepper
Diced
1cupSliced mushrooms
1tablespoonSoy sauce
1tablespoonOyster sauce
2tablespoonsChopped fresh coriander,
Mint, or green onion

Directions

In skillet or wok, heat oil over high heat; stir-fry ginger and garlic for 30 seconds or until fragrant. Add chicken; stir-fry for 2 or 4 minutes or until lightly browned. Add onions, sweet pepper and mushrooms; stir-fry for 1 to 3 minutes or until softened. Stir in soy and oyster sauces, tossing to coat. Sprinkle with coriander. Makes 4 servings.
