|⅓ cup||Butter; divided|
|⅔ cup||Chopped diamond walnuts|
|1 pack||Blueberry muffin mix 13 oz|
|⅓ cup||Granulated sugar|
|¾ teaspoon||Pumpkin pie spice|
Melt 1 tablespoon butter in a small skillet. Add walnuts and saute lightly a few minutes; set aside.
Prepare muffin mix according to package, adding the sauteed walnuts. Spoon into small greased muffin pans; bake as directed. Remove from pans and dip each muffin in remaining melted butter, then roll in mixture of sugar and pumpkin pie spice.
Makes 1 to 2 dozen muffins.
