Potato sambal

4Scallions, Finely Minced
2Serrano Chiles, Fine Chopped
½teaspoonSalt
1tablespoonLemon Juice
2tablespoonsCoconut Milk
1tablespoonCilantro, Chopped

Directions

Boil potatoes in their skins; peel and coarsely mash them. Combine all ingredients, except the coriander, in a shallow serving bowl. Taste the mixture and add more salt or lemon juice if necessary. Sprinkle coriander over the top. Chill in the refrigerator until ready to use.
