Omelette sambal

Ingredients

4 | Eggs, slightly beaten | |
3 | tablespoons | Peanut oil |
1 | large | Onion, finely sliced |
2 | Red chillies | |
1 | teaspoon | Dried shrimp paste |
(belachan) | ||
1 | teaspoon | Garlic, chopped |
½ | teaspoon | Ground black pepper |
Salt to taste |
Directions
Heat oil in a wok and fry onion till soft and golden. Blend chillies, dried shrimp paste, garlic, pepper and salt to a paste in an electric blender, adding a little water to facilitate blending. Add spice mixture to onions and stir fry till mixture smells fragrant, and oil comes to the surface.
Stir in beaten eggs and cook into one large omelette. Divide into 4-6 segments and serve with rice as an accompaniment.
