Potato pudding

Measure Ingredient
6 \N Potatoes, drained but not>>
\N \N Dry.
1 \N Onion, grated
1 teaspoon Salt & pepper (to taste)
1 tablespoon Matzo meal or cream wheat
3 \N Eggs, beaten
6 tablespoons Oil, margarine or crisco

Grate potatoes, drain but not dry. Put back starch. Add grated onion, 3 eggs, 1 tablespoon cream of wheat, matzo meal, or flour and salt. Melt shortening. Add 4 tbs. to potatoes and leave 2 tbs.

inside baking pan. Bake for 350 F. for abt. 1 hr.
