| 10 | ounces | Frozen chopped spinach; thawed, drained, excess moisture squeezed out |
| 4 | Boneless skinless chicken breast halves | |
| 1 | cup | Mayonnaise |
| 11 | ounces | Canned cream of chicken soup |
| 1½ | teaspoon | Curry powder |
| ½ | cup | Shredded cheddar cheese |
| ½ | cup | Cornflake crumbs |
| 2 | tablespoons | Parsley |
Directions
Prep: 10 min, Cook: 35 min.
Preheat oven to 350øF. Spray a casserole with nonstick cooking spray. Press spinach in bottom of casserole in an even layer. Place chicken on top.
Combine next 3 ingredients in a bowl and spread evenly over chicken. Cover top with cheese. Sprinkle corn flakes crumbs over top, then parsley. Bake 35-40 minutes, uncovered.
