Plum tomato salsa with sherry vinegar

Seeded, and cut into 1/2\"
Dice
1Medium shallot, sliced thin
1Serrano chile, seeded and
Sliced thin
2tablespoonsSherry vinegar
½cupOlive oil
½teaspoonChopped fresh thyme, or
1/4 ts dried
1tablespoonChopped fresh cilantro
1tablespoonChopped fresh parsley
Salt and ground black
Pepper to taste.

Directions

Mix all ingredients together in medium bowl. Serve within 2 hours.
