Planet hollywood's crunch chicken

Yield: 4 Servings

Measure Ingredient
5 ounces Cap'n Crunch Cereal
4 ounces Corn flakes
¼ cup Flour
¼ teaspoon Onion powder
¼ teaspoon Garlic powder
¼ teaspoon Black pepper
2 Eggs
¼ cup Milk
24 1-0z chicken tenderloins or
Chicken breasts cut into

Place cereal in a food processor. Mix well until crumbs are formed.

(There should be some chunks of cereal in the mixture.) Transfer to a mixing bowl. Combine flour, onion and garlic powder and pepper in a second mixing bowl. Combine eggs and milk in a third mixing bowl.

Place chicken in seasoned flour, one at a time, dip and coat evenly in egg wash, then coat evenly with Crunch mixture. Using a candy thermometer, heat oil in large frying pan until temperature reaches 325f. Fry tenders for 3½ minutes or until golden brown. Remove and drain on paper towels.
