Plain tomato sauce [salsa di pomodoro]

Yield: 8 servings

Measure Ingredient
1 quart Tomato puree *
3 \N Garlic cloves, sliced
2 \N Sweet basil sprigs
½ cup Olive oil
\N \N Salt

~* May be canned or home-canned ; amount is approximate.

Heat saucepan. Add oil, basil and garlic and cook only until garlic is softened. Add puree and a little salt. Cook for 20 minutes or until creamy. May be made ahead of time and frozen in recipe-size batches.
