Yield: 4 servings
|2 tablespoons||Olive oil|
|1 large||Garlic clove, halved|
|14 ounces||Can peeled tomatoes|
|1 tablespoon||Tomato paste|
Heat the oil and garlic in a saucepan over low heat for 5 minutes or until oil is well flavored. Discard the garlic. Add the tomatoes and their liquid, tomato paste, and salt and pepper to taste. Bring to boil; cover and simmer very gently for at least 40 minutes, preferably longer. Beat the sauce if necessary to break up any large pieces of tomato, check the seasoning and use as required.
Makes about 1¼ cups sauce.
