Peta pancakes

Measure Ingredient
1 cup Unbleached all purpose flour
1 tablespoon Sugar
2 tablespoons Baking powder
⅛ teaspoon Salt
1 cup Soy milk
2 tablespoons Veg oil

Combine the flour, sugar, baking powder, and salt in a bowl and mix thoroughly. Mix in the soy milk and oil, and with an electric mixer or wire whisk, beat just until batter is smooth.

Measure 1/3c batter onto a hot, oiled griddle. When bubbled appear on the upper surface of the pancake, about 2 mins, flip. Cook the pancake for another 2 mins. Remove from pan and keep warm while you make remaining pancakes. Serve warm with maply syrup or fruit syrup.

Makes 6-8 pancakes.
