Pepper lamb patties

Ingredients

Quantity Ingredient
2 cups Spinach leaves
½ pounds Ground lamb
½ Lemon; juice of
Lemon; ¥
1 Onion
1 Egg
½ Red bell pepper
2 tablespoons Olive oil
2 teaspoons Dried thyme
1 small Yellow bell pepper
1 small Green bell pepper
Salt & black pepper

Directions

Place lamb in bowl of food processor. Add juice, onion, egg & spinach.

Process until well blended. Heat oil in saute pan over medium heat & add thyme, stirring a few seconds. Add yellow & green peppers to pan. Saute 2 minutes until softened. Remove lamb from processor bowl & form into patties. Place in pan with peppers & cook on each side until crusty & golden brown. Season to taste with salt & black pepper. Serve patties & peppers with lemon wedges.

Approximately 10-15 minutes.
