Peking jade salad

Yield: 1 Servings

Measure Ingredient
1 \N 6-ounce chicken breast, boneless and skinless
2 cups Mixed salad greens of choice
½ cup Carrots, shredded
¼ cup Snow peas, fresh
2 slices Tomato
1 \N Black olive
1 \N Hard-boiled egg, peeled, quartered
¼ cup Alfalfa sprouts
\N \N Salt and Pepper

coral Isle Cafe, Disney's Polynesian Resort Lightly season chicken breast with salt and pepper. Broil chicken approximately 5 minutes on each side, until lightly browned and cooked.

Place mixed greens on a large salad plate or bowl. Arrange carrots, snow peas, tomato slices, black olive, and egg around sides of plate or bowl.

Slcie broiled chicken on bias and place in center of salad. Garnish with alfalfa sprouts and serve with your choice of dressing. Makes 1 serving.
