Peanutty sweet potatoes

Yield: 4 servings

Measure Ingredient
18 ounces Sweet potatoes; drained
½ cup Peanut butter; smooth or crunchy
½ cup Orange juice
¼ cup Sugar, brown; firmly packed
½ teaspoon Salt
¼ teaspoon Pepper
\N \N Marshmallows

Put sweet potatoes into bowl and mash; stir in peanut butter, orange juice, brown sugar, salt, and pepper. Spoon mixture into a buttered 9-inch piepan. Bake at 350 degrees for 20 to 25 minutes.

Remove from oven and place marshmallows on top. Return to oven for about 5 minutes or until marshmallows are brown and melting.
