Candied sweet potatoes with peanuts

Yield: 5 Servings

Measure Ingredient
4 \N Med. sweet potatoes or yams
1 cup Boiling water
½ cup Firm-packed lt. brown sugar
¼ cup Butter or margarine
1 teaspoon Prepared mustard
½ teaspoon Salt
2 tablespoons Chopped peanuts

Peel and slice the sweet potatoes, arrange in shallow 2-qt. baking dish.

Combine water, sugar, butter, mustard and salt; pour over potatoes. Bake, covered with foil, at 325 F for 45 minutes. Remove foil. Spoon syrup over potatoes and sprinkle with chopped peanuts. Bake 20 minutes longer, basting several times, until potatoes are tender and slightly glazed and peanuts are lightly browned.
