Peanut spinach balls

| 2 | 10 oz packs frozen chopped spinach | |
| 1 | small | Onion; peeled and finely |

| 4 | ounces | Bread stuffing mix |
| 1 | ounce | Vegetarian Parmesan cheese |
| 4 | Free-range eggs; well beaten | |
| 6 | ounces | Butter; melted |
| ½ | teaspoon | Freshly chopped thyme |
| 1 | Clove garlic; finely crushed | |
| ¼ | teaspoon | Salt |
| ¼ | teaspoon | Freshly ground black pepper |
| 7 | ounces | USA peanuts; chopped |
Directions
1. Pre-cook and thoroughly drain the spinach. Mix all the ingredients apart from the chopped peanuts together in a large bowl and chill for 1-2 hours.
Form into balls and then roll each ball in the chopped peanuts.
2. Cook for 15 minutes in a pre-heated oven at 180øC/350øF/gas mark 4 until lightly browned. Serve hot or cold.
