Peanut chicken tidbits

| 2 | tablespoons | Smooth peanut butter |
| 1 | tablespoon | Honey |
| 1 | tablespoon | Light soy sauce |
| 2 | tablespoons | Lemon juice |
| 1 | teaspoon | Ground ginger |
| 1 | Onion, finely chopped | |
| 1 | teaspoon | Tabasco sauce |
| 1 | pounds | Chicken breasts, skinned and boned |
Directions
Combine the water, peanut butter, honey, soy sauce, lemon juice, ginger, onion and Tabasco. Cut the chicken into ¾ inch cubes and add to the peanut mixture, stirring to coat. Cover and refrigerate for 2 hours or overnight. Soak 32 small wooden skewers in cold water for 30 minutes.
Thread 2 pieces of chicken on each skewer. Broil for about 10 minutes, turning several times. Bring the peanut mixture to a boil, then reduce the heat and simmer about 10 minutes or until thickened.
