Peach and schnapps sorbet

Measure Ingredient
500 millilitres Peach pulp
200 millilitres Peach Schnapps
500 millilitres Sugar syrup
½ A lemon; juice of
½ An egg white lightly beaten

Make the pulp from the pureed flesh of blanched and peeled peaches.

Mix this with the Schnapps, cold sugar syrup and lemon juice.

Pour into the ice cream machine with the egg white.
