Pasta with beets - house beautiful

Ingredients

5smallsFresh beets, about 1 lb, washed, stems removed and root ends trimmed
Water
1poundsFresh linguine
½cupExtra-virgin olive oil
½cupCoarsely chopped fresh Italian parsley
½cupCoarsely chopped fresh curly parsley
Freshly ground black pepper to taste

Directions

In a saucepan cover beets with water, bring to a boil and cook, covered, for about 30 minutes or until tender. Drain and reserve cooking liquid. When beets are cool enough to handle, slip skins off, slice into even rounds and set aside.

In a large pot, boil at least 4 quarts water and cook hnguine for about 2 minutes or until al dente. Drain, place in a warm serving bowl and toss with beets, olive oil, parsley and pepper. If desired, toss pasta with 2 to 3 tablespoons ofthe reserved cooking liquid.

Serves 4 to 6.
