Ingredients

1eachPk (7oz) elbows, cooked and drained
½cupSkim milk
¼cupEgg beaters, beaten
¼teaspoonLite salt, optional
cupHunt's light spaghetti sauce
1can(10oz) Rotel tomatoes and green chiles, cut up and drained
1smallGreen pepper, finely chopped, optional
1smallOnion, chopped
1can(8oz) sliced mushrooms, rinsed and drained
1teaspoonItalian seasoning
2cupsGrated nonfat mozzarella cheese
½poundsSkinless white turkey meat, ground, cooked and drained

Directions

Blend skim milk, Egg Beater and salt. Add macaroni and mix well.

Spread evenly in a 15 x 10" baking sheet that has been sprayed with Pam. Combine Rotel tomatoes with spaghetti sauce and turkey; spread on macaroni. Top with bell pepper, onion, mushroom and Italian seasoning. Top with cheese. Bake at 350F. 30 minutes or until the macaroni mixture is set. Let stand 5 minutes before cutting.
