Pasta house salad

Ingredients

4tablespoonsRed wine vinegar
4tablespoonsLemon juice
1cupSalad oil
2teaspoonsSalt
½teaspoonPepper
2tablespoonsSugar
½teaspoonGarlic powder
1mediumRed onion, sliced very thin
4tablespoonsChopped pimento
1canArtichoke hearts, sliced

Directions

This is a copycat of the salad served at The Pasta House (and Rich & Charlie's) in St. Louis, Missouri: Mix together all ingredients except for parmesan cheese and pimento.

Marinate overnight in airtight container. Just before serving, add cheese and pimento. Pour over one large head of iceberg lettuce.
