Passover cookies (egg-reduced)

Measure Ingredient
PASSOVER COOKIES (REDUCED-EGGS)

(Makes about 1 1/2 dozen)
1 each Egg
⅓ cup Oil
½ cup Sugar
½ each Pear or Apple; grated <OR> 1/4 c fruit juice
⅛ teaspoon Cinnamon (omit if using orange juice)
¾ teaspoon Passover Baking Soda
1 cup Cake Meal
½ cup Nuts; chopped (less if they are very finely chopped)
¼ cup Raisins

INSTRUCTIONS

In a large bowl, beat egg slightly. Add oil, sugar, cinnamon, grated fruit <OR> juice. Mix well. Add baking soda, cake meal, nuts and raisins one at a time, mixing after each addition. Drop by teaspoonfuls on cookie sheet> Bake at 350F for 10 to 12 minutes.
