Measure | Ingredient |

6 ounces | Matzo meal, finely ground |
2 ounces | Potato flour |
1 pinch | Salt, - or - |
1 teaspoon | Granulated sugar |
3 tablespoons | Ice water |
4 ounces | Margarine |
Mix together matzo meal, potato flour, salt or sugar (depending on whether you're making a savory or sweet dish). Rub in margarine until it resembles fine bread crumbs. Add ice water, a little at a t ime (you may not need all of it), until it forms a ball. Wrap in plastic and chill at least 30 minutes before working.
